The dish attracts a great number of guests due to its uniqueness of having some little edible rocks put in the broth, which generates a cool, fresh and comfortable feeling when tasting the noodle soup.
These small edible rocks are also likely to help regulating the body temperature on the hot days of summer. Main ingredients of cold noodles include: noodles, eggs, pork, beef bone broth, onions, ginger, garlic, vinegar… Brown noodle slices wrapped up in bundles are put in a large bowl, covered upon with thin pork chops, half a boiled egg, cucumber slices, cabbage and added with some chili sauce. Taste some cold noodles and you would instantly feel the tough, fresh taste of noodles, light sour flavor of kimchi, sweet flavor of the broth and chili taste of the sauce that altogether melts scrumptiously in your mouth. The most popular cold noodles restaurant remains Dae Cheong Ma Ru Restaurant, located on Hau Giang St., Tan Binh Dist.
Naengmyeon Korean cold noodles are the perfect way to cool off on a hot day, and not just because the cold and tangy broth contains slushy bits of ice. The content and portion-size is also modest and keeps you from feeling too stuffed. For all these reasons, I’m not surprised that supposedly 9 out of every 10 Koreans love their naengmyeon (I’m sure their survey methods were very scientific^^). - - DiscoveringKorea
Found along Naengmyeon Street in Ojang-dong (near the Jung-gu office district in Seoul) stands a popular Hamheung naengmyeon restaurant called Heungnamjip. In business since 1953, Heungnamjip is famed for its Hoe Naengmyeon. In this unique sweet and sour dish, the noodles are topped with slices of raw and seasoned stingray and flavored with a mixture of sesame oil, vinegar, mustard, and sugar. - Visit Korea
